I had a difficult time picking a recipe to make (showcase) for this. In the end I decided on a recipe that anyone can make – it requires no skill! And I adore this…and it’s so simple and so good! The ingredients have been around a long time and are products of Kraft so I’m inclined to believe it’s a company recipe. I dunno though. Either way I have some of this sitting in my freezer right now for a BBQ on Sunday. If it makes it that long. 😀
(1) 12 oz can of frozen pink lemonade “juice” concentrate – thawed
(1) 8 oz. carton of Cool Whip, or the same amount using real whipped cream if you prefer
(1) 14 oz. can condensed milk
2 graham cracker or shortbread crumb crusts, ready made or make your own
Mix in a large bowl the liquid “juice”, and condensed milk. Fold in the Cool Whip until the mixture is smooth and consistent.
Spoon into the pre-made crusts and freeze. I suggest at least a few hours but it’s better if frozen overnight.
It will never harden all the way – that’s the beauty of it. And it will melt (though rather slowly). So don’t make this unless you have a freezer to store it in until serving time. And personally I think it tastes better with the shortbread crust than the graham cracker, but try whatever works for you. Enjoy!

i’ve had similar pies, but never with pink lemonade – i have to make this!!! plus, pink lemonade is so much better than regular lemonade.

Imitation whipped cream. It’s not very good but it’s quick and easy. You can use real whipped cream instead. Actually it has a very nice flavor to it when do that as well! But I’m lazy and Cool Whip costs $1. 🙂
